Salmon de Province
Rub cold salmon with kosher salt. Coat and squeeze with fresh lemon juice. Then rub with fresh dill, basil, thyme, marjoram and minced shallots. Brush room temperature butter and fresh minced garlic as a finish onto salmon creating thick paste. Garnish with thin sliced tomato for flavor only. (Fresh Tomato juice is an excellent marinade for fish and chicken) Refrigerate for 3/4 hours. Broiled on top rack for 10 minutes. Turn oven off and let remain in oven for 5 addtl. minutes. Remove from oven. (This can also be grilled vs. broiled. Squeeze with more fresh lemon juice and serve!
